If you buy whole white rice locally in bulk, as opposed to buying packaged rice flour, you can save over $3/pound by milling your own rice flour at home (see http://www.makeflour.com/?p=18). That is a huge savings that can add up over time to not only pay off your grain mill investment but keep more money in your pocket. Many other gluten-free whole grains and seeds will also show great savings when milled at home in the WonderMill grain mill.
Not only do you save money milling your own gluten-free flours but you also get to enjoy fresh flours on demand. These are flours that have not been sitting on the shelf at the grocery store or some warehouse. Storing gluten-free whole grains is much better than storing gluten-free flours, or any types of flour. Most whole grains are designed by Mother Nature with an outer layer that protects the inside of the grain or seed. This outer layer allows the nutrients and oils to be preserved for a very long time before they go stale or rancid. Flours, on the other hand, are exposed, without protection, and go stale or rancid much faster, making it not a good idea to buy flours in bulk like you would whole grains.
There are many gluten-free flour combinations out there that work well. However we would like to tell you about one more: Chef Brad's Gluten-Free Wonder Flour. Gluten-Free Wonder Flour is easy to make in the WonderMill grain mill. Just add 1 part sorghum grain 1 part brown rice and 1 part amaranth grain in a bowl, stir the whole grains together until well mixed, then pour the grains into the WonderMill and you have gluten-free Wonder Flour. This flour works great for non-yeast baked goods as an all-purpose while flour replacement.
